Who doesn’t love a little comfort food every now and then? I do, for sure! Sloppy joes and mac & cheese are such a perfect combination. Typical sloppy joes made with the can mix are laden with sugar. These sloppy joes are a healthier alternative. They taste a bit tangier than what you might be used to, but they are oh so good! Even husband approved!
Homemade Sloppy Joes
Ingredients
1 Tbl. olive oil
1.25 lb. 99% lean ground turkey
1/4 C brown sugar
~2 tsp. chicken grilling seasoning (or whatever robust seasoning you have)
1 small to medium onion, finely diced
1 red pepper, diced
1 Tbl. red wine vinegar
1 Tbl. worcestershire sauce
2 Tbl. tomato paste
Directions:
Heat saucepan to medium high heat. Add oil to pan along with turkey. Break apart meat as it browns. Once meat is cooked, reduce heat to medium and add sugar, seasoning, onion, red pepper, vinegar and worcestershire. Cook for 5 minutes. Add tomato sauce and paste and cook for 5 more minutes. You’re done!! SO FAST!
*You can serve this on a 100% whole grain bun, but since we were having mac & cheese (lightened up version) with it, no buns were needed. Delish! I had a little cole slaw on the side with a lite dressing and side salad. (You could put this in the slowcooker too… just brown the meat first)
Enjoy!
