Yummy Things Day :)

So we’ve all heard/had yogurt, granola, and fruit. I mean, McDonald’s made that famous. But check out my new treat that is not only nutritious (with some splurges) but DELICIOUS!!! It’s certainly more calories than a snack, so make it a mini-meal (rounded out with leftover roasted veggies on the side). Strange combo, I know. But so so good!


– 5.3 oz Dannon plain Greek non-fat yogurt (80 cal)

– 2 Tbs. sweetened coconut flakes (70 cal)

– 1/4 C Heartland Granola cereal (120 cal)

– 1/2 oz ghiradelli dark chocolate chips (80 cal)

Total: 350   (YUMMM!!!!!)




Next in line… corn, pepper, and black bean salad. This recipe is modified from The New American Plate cookbook. In my quest for improving my nutrient-rich diet, this cookbook is perfect. It’s totally focused on a plant-based (with meat on the side) diet very high in vitamins and minerals. Check out this dinner! (this picture seriously doesn’t do it justice)

bag of frozen corn, thawed

can of black beans, drained and rinsed

1-2 green peppers, diced

1/2 C quinoa dry (place in saucepan with 1 C water. bring to boil. reduce heat to medium and cover. cook for 13 minutes.)

pico de gallo (or other salsa)

1/2 rotisserie chicken

salt and pepper to taste

1/4 C cilantro, chopped

Mix in a bowl. Serve with tostitos baked scoops and sprinkle some low-fat cheese on top. Serve either hot or cold. Enjoy!!!

  1. Mmmm, love these!! Especially the salad. I love quinoa and maybe my kids would go for it in this (rather than the yummy breakfasts I make with it, ah well). Thanks!!
