My Plate in Action!

There’s nothing better than a delicious grilled summer meal. Putting the plate method into action is simpler than people think. The hardest part is just remembering to portion your plate properly. Remember: 1/2 fruits and veggies, 1/4 protein, 1/4 whole grain. Here is a sample of a delicious and easy weeknight dinner.

Prep was easy!

On the menu:

Grilled Chicken- Marinated in Italian Dressing

Grilled Veggies!!- onion and peppers sprayed with canola spray w/ a little salt and pepper

Grilled Sweet potato fries!- woot, woot! Boil the potatoes for about 10 mins. Then pat dry and spray w/ canola spray. Add seasonings (I used salt, pepper, paprika, and garlic powder). Place in grill pan and grill about 4-6 more minutes (or so).

Freshly Brewed Iced Tea- unsweetened w/ lemon slices

So, yes, my plate was definitely full this night (however, we use 8 inch plates for dinner so that helps). BUT I made sure to make the veggies fill almost 1/2 my plate! We also had some raspberries to round out the rest of the 1/2.

Look at those sweet potatoes!

Chicken was soooo juicy!

What is YOUR favorite thing to grill? Anybody tackle fruit yet?
