Delicious Summer Dishes

There is nothing better then a light and healthy meal on a hot summer evening. It feels so good to eat something that I know is making my body happy. And after a light meal, what better way to end the night then with a fruit dessert. Indulgent? Yes, but oh so delicious!


Tabbouleh w/ Tuna (adapted from Giant Eagle)

This served as the main and only dish for dinner! So satisfying. And the hubs liked it!!




2/3 Bulgur Wheat (did you know that there is a whopping 7g of fiber in each serving!) (quinoa or barley would be awesome too)

1 1/2 C water

1/4 C Red Wine Vinaigrette (easy to make your own w/ red wine vinegar, olive oil, salt & pepper)

1 Tbs. Lemon juice

1 C Cherry tomatoes

1 Red onion, diced (feel free to substitute with green onions or a sweet vidalia)

2/3 C Parlsey, chopped (I think it would also be tasty with cilantro)

2/3 C Cucumber, diced

1 Green pepper, diced

Tuna (my own flare for added protein and omega-3s)


Place bulgur and water in a medium sized pot and bring to a simmer. Cook for about 8-10 minutes until water is absorbed. Remove from heat and allow to sit, covered for an additional 5 minutes; transfer to medium sized bowl. Add in tomatoes, cucumbers, parsley, lemon juice, vinaigrette, and tuna. Cover and refrigerate until well chilled. (This was perfect the second day!)

Next up, DESSERT! Peaches are absolutely fantastic right now. Last year, I made this tart with plums (super good). By my husband isn’t a big fan of plums so I changed it up and used peaches. Really, you could make this however you choose by changing up either the fruit or the jam or both! (I can’t remember where this recipe came from… I think I changed it up from the original anyway. Kudos to whomever inspired my creativity.) Seriously, this is totally gourmet and perfect for company! And sooooo easy!

“Insert-fruit-here” Tart (In this case, peach)

Just 5 ingredients!

1 pie crust

3 peaches (it only needed 2.5 peaches so I had a half of a peach as a warm-up for dessert 🙂 )

All fruit jam (I used strawberry)

Egg (for an egg wash)

 Sugar (optional)


Preheat oven to 450 degrees. Spread a thin layer of jam in the center of the pie crust. Cut peaches into slices and arrange onto pie crust. Fold over crust edges to partially cover peaches. Spread egg wash onto the edges of the pie crust. Sprinkle a little bit of sugar onto crust edges (will create a fabulous golden crust) and over the peaches (if the peaches aren’t quite ripe). Sugar not needed if the peaches are sweet and ready to go. Bake 10-12 minutes until edges are golden brown. Let sit 10 minutes to cool. Enjoy w/ a scoop of light vanilla ice cream or frozen yogurt.
