Chia Pancakes and Banana Bread

2 recipes I tried out this past week, and both were FANTASTIC! Chia pancakes got a solid review from my brother. Just think of the many possibilities and additions you could make to the recipe! …pumpkin, fruit, nuts… yumm! The other recipe was a chia banana bread with chocolate chips that my husband couldn’t stop eating. He said it was awesome! Enjoy.

Chia Pancakes (makes 8-10)

1 C white whole wheat flour

1/2 C oats

1 C fat free milk

1 egg

1 Tbsp. unsweetened applesauce

2 Tbsp. honey

1 1/2 tsp. baking powder

1/2 tsp. pumpkin pie spice

1/4 tsp. salt

1 tsp. vanilla extract

1 Tbsp. chia seeds


Heat griddle to medium high heat and spray with nonstick canola spray. Beat eggs, milk, honey, applesauce, and vanilla. Add in flour, oats, spice, baking powder and salt. Lightly beat or stir until just combines. Add chia seeds and stir to combine. Use a 1/4 cup measure to ensure equal sized pancakes and pour batter onto griddle. Cook on each side until lightly brown. Top as desired.


Chia Banana Chocolate Chip Bread (makes 1 regular sized loaf)

1 1/4 C white whole wheat flour

1/2 C sugar

1/4 C brown sugar

1/2 tsp baking soda

1/4 tsp. salt

1/2 tsp cinnamon

1 Tbsp. chia seeds

1 egg

2 ripe bananas, smashed

1/4 C unsweetened applesauce

1 tsp vanilla extract

1/2 C dark chocolate chips


Preheat oven to 325 degrees and spray loaf pan with nonstick spray. Beat sugars, applesauce, egg, and vanilla together. Beat in mashed bananas (or whisk). Add in flour, baking soda, cinnamon, and salt and lightly beat until just combined. Add in chia seeds and chips. Stir to combine. Pour batter into pan. Bake for 40-45 mins or until toothpick inserted into center comes out clean. (start checking at 35 mins to make sure not to overbake!)
